Eggplant Pasta recipe

Eggplant Pasta ingredients list:
Pasta.
1 eggplant.
1 large onion.
1 chili pepper.
2 tins of peeled tomatoes.
1 ½ tablespoons of olive oil.
Fresh basil.
Fresh garlic, crushed.
Dried herbs (for example: capsicum, oregano, rosemary, parsley, thyme, etc.).
Salt, to taste.

Instructions for Eggplant Pasta:
Slice the eggplant and cover in the salt. Leave for about 45 mins.

Rinse salt, then squeeze until almost dry.

Cut into chip-sized pieces and fry in olive oil.

Add the large onion and cook for about 5 minutes.

Add all of the other ingredients and simmer for 25 minutes.

Cook your pasta.

Serve the mixture with your pasta.

Fettuccine with Porcini Mushrooms recipe

Fettuccine with Porcini Mushrooms ingredients list:
1 pound fettuccine
2 tablespoons unsalted butter
1 tablespoon olive oil
4 shallots, minced
1 ounce dried porcini mushrooms
2 cups chicken or beef broth
1 cup heavy whipping cream
½ cup chopped fresh parsley
1 cup grated Parmesan cheese

Instructions for Fettuccine with Porcini Mushrooms:

  1. Cook pasta in a large pot of boiling water until just soft, 8 to 10 minutes. Drain, reserving ½ cup of cooking liquid. Cover and set aside.
  2. Melt butter and oil together in a large skillet over medium heat. Add shallots and cook 3 minutes, until softened.
  3. Add mushrooms and stir. Add broth and cream and bring to a boil. Cover and cook until mushrooms are soft, 20 minutes.
  4. Add cooked pasta to the pan, along with the reserved cooking liquid and parsley. Cook until the sauce thickens and noodles are well coated, about 5 minutes. Add cheese, stir to mix, and serve.

Ginger Pasta recipe

Ginger Pasta ingredients list:
½ lb of angel hair or similar pasta.
2 green onions, sliced finely.
¼ cup of rice vinegar.
2 tablespoons of soy sauce.
2 tablespoons of ginger root, minced.
2 tablespoons of honey.
2 teaspoons of sesame oil.
1 teaspoon of chili paste.

Instructions for Ginger Pasta:
Combine all of the ingredients other than the pasta and sesame oil and mix thoroughly.

Cook the pasta in boiling salted water.

Drain and toss with the sesame oil.

Add the mixture, toss gently, and serve.
